Our cafes are the heart and soul of The Boy & The Bear experience. Here, we integrate with customers to create the perfect Colombian coffee experience, from the precise extraction of our coffee to the curated playlist of Colombian music and rhythms that celebrate our people and culture. Working in our cafes involves attending to our customer’s needs, making sure every drink served meets our customer’s expectations and our company's standards. It also involves problem-solving to ensure smooth operations, maintaining impeccable shelf presentations, and being knowledgeable ambassadors of our passion for world class coffee sand exceptional brand experience.Our team members in this department are crucial in delivering an exceptional customer experience, making every visit to our cafes a memorable one.

Positions in this division:

  • Barista & Cashier: The face of our cafes, responsible for guiding customers through the menu, sharing our passion and love for specialty coffee through friendly conversations, and addressing customers' questions regarding product suggestions. Also maintains a clean and neat workspace at all times.

  • Lead Barista: Oversees activities behind the bar and ensures the quality of coffee and service. Responsible for coffee quality and customer experience, ensuring that coffee extraction, milk texture, and product presentation meet our standards before serving.

  • Lead Barista Senior: A natural leader with extensive experience in our company or the specialty coffee industry. Mentors baristas and maintains high standards while assisting the Store Leader with necessary operational tasks.

  • Store Leader: Manages the daily functions of the entire cafe, focusing on customer satisfaction and operational excellence. Ensures that every aspect of the cafe runs smoothly and that both staff and customers have their needs met.

Production

Production

The Production department is the backbone of The Boy & The Bear, making the Colombian coffee experience possible across all our cafes. This team is responsible for everything from green coffee buying, quality control, and green coffee selection for our coffees, to roasting and distributing to all cafes. They handle bagging, packaging, and ensuring our stores are well-stocked.

Staff in this department must exhibit high attention to detail, organizational skills, and efficient time management to deliver the best quality products. Their work ensures that every cup served is a testament to our commitment to excellence.

Positions in this division:

  • Head of Production & Green Buyer: Responsible for green coffee sourcing and purchasing, roasting, and quality control. Coordinates and oversees warehousing inventory, seasonal production needs, and weekly deliveries to all cafes.

  • Roaster: Ensures the demand at all cafes is met and coordinates the production of seasonal and limited items. Oversees quality control after every roasting session and is responsible for the production of in-house merchandise.

  • Production Assistant: Supports the production team in various tasks to ensure smooth operations. Maintains high standards to ensure every item produced in-house is impeccable and neat. Coordinates and is responsible for fulfilling warehouse orders every week.

Headquaters

Headquaters

Our Headquarters is where innovative thinking and strategic planning come together. This division is responsible for new product development, state-of-the-art packaging, store design, and enhancing the customer experience. Additionally, the Headquarters team ensures the smooth performance and care of our stores and cafes, while also focusing on the well-being of our team and staff.

This division includes:

  • CEO: Provides overall leadership and strategic direction, ensuring cohesion in branding, retail store design, and the overall customer coffee experience

  • Executive Administrative Assistant: Supports the CEO and Headquarters executive team by managing company projects and handling administrative tasks.

  • HR: Manages employee relations, organizational development, ensures compliance with standards, and maintains a healthy, safe, and supportive work environment.

  • Multi-Store Manager: Oversees the daily activities of our cafes, coordinating withStore Leaders to meet both staff and customer needs. Top Required Qualifications (Apply ONLY if you meet ALL):

Key Responsibilities

1. Financial Performance
Monitor and control all store costs based on percentage-to-sales metrics.
Ensure bi-weekly payroll scheduling aligns with the labor target of % of sales.
Review timecards, ensure full compliance, and approve payroll within the budget of your stores every payroll cycle.
Manage pastry, milk, and distributor purchases through prior data analysis with established budget limits.
Maintain profitability while achieving year-over-year sales growth and quarterly transaction increase goals.
Analyze and forecast Sales vs. COGS performance from POS reports to stay within all monthly budget percentages and identify early trends affecting profitability.
Ensure each store meets daily sales goals through planning, staff motivation, and on-shift leadership.
In collaboration with the General Manager, maintain a target net profit margin per store.
Practice effective negotiation with vendors for repairs and third-party services to achieve the highest quality at the lowest cost.
Track all KPIs monthly and quarterly, ensuring each location meets performance goals. Hold each Assistant Manager accountable for results and gap closure.
New Café Opening (NCO) Support: Partner closely with the General Manager to stabilize operations, guide training, and manage labor efficiently during opening weeks.
Quarterly Time-Tracking Audit: Conduct a self-initiated weekly time-tracking review during the first week of each quarter to ensure accuracy and consistency.

2. Café Presentation (OCV)
Maintain top-tier store presentation and cleanliness standards.
Ensure pastry cases are clean and aligned, retail shelves organized, and all surfaces free of clutter.
Address non-urgent repairs within 12 days and urgent repairs within 1–2 hours.
Achieve 95%+ on ownership, HQ, and secret-shopper audits.
Maintain an A-grade Health Department rating.
Take full ownership of upkeep: cleaning, maintenance, power washing, plant care, and coordinating repairs. Ensure all R&M needs are handled quickly and cost-effectively.

3. Staff Management & Compliance
Onboard and train new staff according to company culture and standards.
Conduct quarterly performance reviews for Lead Baristas and Baristas based on our 3 pillars of success.
Manage scheduling, meal breaks, and sick time in full compliance with labor laws.
Identify, coach, and document underperformance verbally and in writing.
Forecast hiring needs at least 6 weeks in advance.
Cover shifts or coordinate replacements as needed.

4. Customer Experience
Personally handle customer complaints and provide resolutions within 24 hours.
Lead by example through on-bar audits reinforcing hospitality standards.
Ensure music, ambiance, and service tone reflect TB&TB’s intentional, design-driven experience.
Ensure all required shifts for store operations are covered at all times.
Ensure stores remain open and operational at all times unless legally required to close.

The Boy & The Bear is a specialty coffee roastery and café brand where design, culture, and world-class coffee meet presented with intention, care, and love to our patrons.
