The Boy & The Bear is building its own in-house bakery program to support all 8 of our cafés, seven days a week. We are looking for a Head Baker, someone who lives fully inside the craft of croissants, laminated doughs, and danishes.
The Head Baker is responsible for the complete leadership of The Boy & The Bear bakery program.
This position oversees production, staffing, product development, financial performance, inventory, purchasing, quality assurance, and operational execution. The role exists to build and maintain one of the finest artisan bakery programs in the specialty coffee industry.
This is a 100% hands-on, production-driven role. No office. No remote work. You are in the kitchen, every day, leading production with your own hands.
This is the person our entire bakery program depends on.
Compensation
Base Salary:
$75,000–$85,000 annually ($102,000 including a 20% performance bonus).
Performance Bonus:
Eligible for a quarterly performance bonus of up to 20% of base salary, with total annual compensation at $102,000 USD
The bakery program will initially launch and operate from our South Pasadena location, allowing us to build a strong and consistent foundation before expanding production across all eight (8) TB&TB cafés.

You must have real, proven experience working with:

3. Full Self-Management:

4. Financial Responsibility & Operational Sustainability:
This is a craft + financial leadership position. Both matter. You understand the full in-and-out economics of running a bakery program:
● COGs

You keep the bakery financially healthy, which includes:

The Area Manager San Diego is responsible for the full financial performance, culture, and execution standards of The Boy & The Bear’s 1st San Diego location: Little Italy.

The Head Roaster is responsible for leading and protecting the quality of The Boy & The Bear's coffee program.
This role oversees green coffee sourcing, inventory planning, roasting operations, sensory quality control, product development, and coffee education across the company. From selecting coffees at origin to approving finished production lots, the Head Roaster ensures that every coffee released under The Boy & The Bear name reflects the standards, values, and level of quality expected from our brand.
Every espresso served in our cafés, every pour-over brewed, and every bag of coffee shipped begins with decisions made in the roastery. As a result, this position carries significant influence over the customer experience and plays a critical role in maintaining consistency across all locations.
The ideal candidate combines technical expertise with strong organizational skills, attention to detail, and a genuine passion for coffee and its continuous improvement.
