The V60 is our preferred way to brew at The Boy & The Bear. It gives us control over the variables that matter: time, flow, and ratio, allowing us to shape the cup with intention.

What we value most about this method is the clean, balanced cup it produces.The paper filter softens the body and allows the more delicate and complex notes to come through with clarity.

In this guide, we share a simple process you can follow at home, the same approach we use in our cafés.

The Mindset for the Brewing Process

A few simple steps, done with attention, can completely change the cup.

Take your time, observe the process, and take note of each result. Adjust your ratio and grind size along the way, and find the cup that feels right to you.

Brewing Setup:
  1. Preheat water to ~96°C
  2. Rinse the V60 filter with hot water
  3. Discard rinse water
  4. Place dripper + server on scale
  5. Add 18g of coffee to the filter

THE EXTRACTION
  1. Start timer.
  2. Pour only 60g in circular motion.
  3. Wait 10-12 seconds for the bloom.
  4. Gently swirl the dripper (bloom phase).
  5. At 0:30 on the timer: Pour to 206g.
  6. At 0:30 on the timer: Pour to 306g.

Let it draw down and finish you extraction around 2:40–3:00 min.
