A High-Altitude Community

Umapate rests in the upper ranges of Cusco, where elevation brings a slower pace to both growth and harvest. The air is cooler, the terrain more demanding, and the conditions favor coffees that develop with precision and depth.

Within this landscape, 22 Quechua families cultivate coffee across small parcels of land, each farm contributing to a shared and evolving system. The work is rooted in tradition, yet shaped by a growing sense of coordination and long-term vision.

The formation of the cooperative in 2022 marked a meaningful shift. Access to shared resources and infrastructure has allowed the community to refine both quality and consistency, while reinforcing the economic stability behind their wOrk

Process as Tradition:

Coffee in Umapate is grown within agroforestry systems, integrated with native vegetation that supports soil health and preserves biodiversity over time. These farms exist as part of a broader ecosystem rather than in isolation. The surrounding landscape influences not only the health of the plants, but the character of the coffee itself. Variations in soil and elevation contribute subtle distinctions that carry through into the cup.

Ongoing efforts in organic practices and conservation continue to shape how the land is managed, with a clear focus on long-term resilience and care. Processing with Time and Control: After harvest, cherries are fermented aerobically for 52 to 72 hours, allowing sugars and structure to develop gradually before depulping.

Drying takes place on shaded raised beds, where airflow and temperature are carefully managed to guide the coffee toward stability.
