Finca Santa Maria is one of nine farms that make up Hacienda Cafetera La Pradera in Aratoca, Santander, Colombia. The farm is operated by 22 women, all heads of household, who work together to cultivate and process coffee while supporting their families and community. Their work reflects La Pradera’s mission of strengthening the Santander coffee sector, creating positive social impact, and producing coffee in harmony with nature.

This particular farm is operated by twenty-two women, all heads of household, who work collectively to cultivate, process, and harvest coffee while supporting their families and strengthening their local community.

Their work reflects a vision that extends beyond coffee production. Through sustainable farming practices, environmental stewardship, and economic opportunity, the women of Santa Maria are helping shape a more resilient future for coffee in Santander while preserving the traditions that have defined the region for generations.

A landscape shaped by history

Located in the rugged hills of eastern Colombia, Santander was home to some of the country's earliest coffee farms. Rich soils, abundant water sources, and a diverse canopy of shade trees create an ideal environment for coffee cultivation. These natural conditions allow coffee plants to mature slowly, developing greater sweetness, complexity, and balance in the cup.

The region's deep agricultural heritage remains visible throughout the landscape, where coffee grows alongside native vegetation and thriving ecosystems that have supported farming communities for decades.

The character of Tabi

This lot is composed of Tabi, a Colombian variety developed to combine exceptional cup quality with strong natural resilience. Grown at elevations between 1,650 and 1,900 meters above sea level, Tabi has earned a reputation for producing coffees with remarkable sweetness, structure, and elegance.

Its adaptability to Colombia's diverse growing conditions has made it a favorite among producers seeking both sustainability and quality, while its cup profile continues to attract the attention of specialty coffee roasters around the world.

Anaerobic Honey with remarkable clarity

After harvest, ripe cherries are carefully selected and fermented before undergoing an extended anaerobic fermentation. The coffee is then dried with precision to preserve both sweetness and clarity, resulting in a cup that feels expressive while remaining beautifully balanced.

The Honey process enhances texture and body, while the controlled fermentation contributes layers of complexity that unfold gradually as the coffee cools.

Santa Maria opens with the sweetness of ripe fig, followed by delicate floral aromatics that bring elegance and lift to the cup. As the coffee develops, notes of toasted nuts emerge, creating warmth and structure that balance the fruit character beautifully.
